I’m an anchovie lover. Mine will always have anchovies on them, regardless of the other toppings.

Ingredients
- 10 Large basil leaves
- 3 Cloves garlic
- 1/4 TSP Oregano
- Tomato paste (Pizza Sauce)
- 2 TSP Italian seasoning (optional)
- 200 Grams Shredded Cheese (we use tasty cheese)
- 1 Small tomato Thinly sliced (optional)
- 2 TB olive oil
- 50 Grams Capsicum (optional)
- 8 Slices Eggplant

Instructions
- Preheat oven to 180 degrees Celsius.
- Slice the eggplant, add a thin layer of tomato paste with the back of a spoon.
- Add cheese and toppings. Once it's all added, lightly drizzle the olive oil over the pizza.
- Put in oven for roughly 10 minutes or until browned.
