I’m an anchovie lover. Mine will always have anchovies on them, regardless of the other toppings.
These mini pizzas are perfect for a quick lunch. Prep them the night before and pop them in the oven for 10 mins to heat them up and melt the cheese.
Preheat oven to 180 degrees Celsius.
Slice the eggplant, add a thin layer of tomato paste with the back of a spoon.
Add cheese and toppings. Once it's all added, lightly drizzle the olive oil over the pizza.
Put in oven for roughly 10 minutes or until browned.
This is great served with keto garlic bread.
