A great way to be inventive with mince meat. We have it quite a lot on keto and have come up with some inventive ways for it not to become mundane.

Ingredients
- 1 Medium Zuccinni (grated)
- 3 Mushrooms (finely chopped)
- 2 TB garlic We used minced
- 1 Can Diced tomato They are generally around 400g
- 100 Grams Eggplant (finely chopped)
- 80 Grams Capsicum (finely chopped)
- 20 Grams Spring onion (finely chopped)
- 20 Grams Red onion (Finely Chopped)
- 500 Grams Minced Beef
- Salt And Pepper To Taste
- 200 Grams Tasty Cheese Optional

Instructions
- Preheat oven to 200 degrees Celsius.
- Add all of the vegetables and mince meat in a bowl. Use a spoon or hands to ensure everything is evenly mixed.
- Roll into balls (golfball sized) and lay on a baking tray. Place in the oven for approximately 8 Minutes.
- In an oven proof dish, combine the garlic and the diced tomatoes. Add the meatballs. If you are using melted cheese, add it at this step.
- Place back in the oven for 10 minutes. Serve hot.
