We’ve been looking for a true, low carb pancake substitute for a while. To be honest, we’d actually given up – but then we tried this and we are hooked! They turned out absolutely delicious and given their friendly macros will become a regular treat in this household!

Ingredients
- 60 Grams Vanilla flavoured vanilla protein powder Add vanilla flavouring if you have unflavoured powder.
- 20 Grams bacon
- 1 TSP Cinnamon powder We use two TSP
- 15 Grams Stevia Or to taste
- 1 TSP baking powder
- 3 Large Eggs
- 100 Ml Unsweetened Almond Milk
- Butter For cooking

Instructions
- Mix everything apart from the almond milk until it forms a thick batter.
- Add in almond milk and whisk for 2-3 minutes until it forms a batter. Ensure there are no lumps left.
- Heat butter in a pan and cook the pancakes. The mix makes about 6.
Recipe Notes
We tend to spread the mix around the pan to create almost more of a crepe - I've found they taste a bit better this way and not quite as dry. I'm still experimenting though, so try it your way and let me know how it goes!
You can also use different flavoured whey protein isolates, as well as topping with your favourite low carb/low calorie treats.
